Cottage Cheese Carrot Cake Bars 

Soft, spiced bars with a high-protein boost.
Ingredients:
• 1 cup cottage cheese (blended smooth)
• 2 large eggs
• 1/2 cup almond flour
• 1/2 cup finely grated carrots
• 1/3 cup sugar-free sweetener (or honey)
• 1 tsp cinnamon
• 1/2 tsp baking powder
• 1 tsp vanilla extract
• Pinch of salt
Instructions:
Preheat oven to 350°F (175°C). Line a small baking pan with parchment paper.
Blend cottage cheese until smooth.
In a bowl, whisk eggs, cottage cheese, sweetener, and vanilla.
Add almond flour, cinnamon, baking powder, and salt. Mix until combined.
Fold in grated carrots.
Pour batter into the pan and spread evenly.
Bake for 25–30 minutes until set and lightly golden.
Let cool before slicing into bars.
