Spring Brunch Cottage Cheese Egg Bake Rolls

Ingredients:
• 6 large eggs
• 3/4 cup cottage cheese
• 1/2 cup shredded mozzarella
• 1/2 cup chopped spinach
• 1/4 cup diced bell pepper
• 1/4 cup chopped green onion
• 1/4 cup milk
• 1/2 teaspoon garlic powder
• 1/4 teaspoon black pepper
• 1/4 teaspoon salt
• 1 sheet puff pastry, thawed

Methods:

Heat oven to 375 F and line a baking sheet or small baking dish with parchment paper.
In a bowl, whisk the eggs, cottage cheese, milk, garlic powder, black pepper, and salt until well combined.
Stir in the mozzarella, spinach, bell pepper, and green onion so the filling is colorful and evenly mixed.
Pour the mixture into a lightly greased skillet or small pan and cook over low heat just until softly set, stirring gently so it stays tender.
Let the filling cool slightly, then spoon it down the center of the puff pastry sheet.
Roll it up carefully, seal the edge, and place seam side down on the baking sheet.
Bake for 20 to 25 minutes until golden and puffed. Let it rest for a few minutes before slicing so the creamy egg filling stays neat inside.
