A simple, high-protein cookie that’s perfect for everyday snacking.
Ingredients:
• 1 cup cottage cheese (blended smooth)
• 1 cup oat flour (or blended oats)
• 1/3 cup maple syrup or honey (or sugar-free sweetener)
• 1 large egg
• 1 tsp vanilla extract
• 1/2 tsp cinnamon (optional)
• 1/2 tsp baking powder
• Pinch of salt
• Optional: 1/4 cup chocolate chips or raisins
Instructions:
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
Blend cottage cheese until smooth.
In a bowl, mix cottage cheese, egg, maple syrup, and vanilla until combined.
Add oat flour, baking powder, cinnamon, and salt. Mix into a soft dough.
Fold in chocolate chips or raisins if using.
Scoop dough onto the baking sheet and flatten slightly.
Bake for 10–12 minutes until set and lightly golden.
Let cool—they stay soft and tender.
