Crispy Zucchini Cottage Cheese Pizza Cup Bites
These little pizza bites are cheesy, crispy, and packed with cozy pizza flavor with tender zucchini folded right into the mix. They are fun to eat, easy to share, and have that golden edge that makes them look like the kind of savory snack everyone wants to save.
Ingredients:
• 2 medium zucchini, grated and squeezed dry
• 1 cup cottage cheese
• 1 cup shredded mozzarella
• 1/4 cup grated Parmesan
• 2 large eggs
• 1/2 cup diced cooked chicken
• 1/2 teaspoon Italian seasoning
• 1/2 teaspoon garlic powder
• 1/4 teaspoon black pepper
• 1/2 cup marinara for serving, optional
Methods:
Heat oven to 375 F and grease a muffin pan very well.
Squeeze the grated zucchini in a clean towel until as much liquid as possible is removed.
In a bowl, mix the zucchini, cottage cheese, mozzarella, Parmesan, eggs, chicken, Italian seasoning, garlic powder, and black pepper until thick and evenly combined.
Spoon the mixture into the muffin cups and press lightly so each bite holds together after baking.
Smooth the tops and bake for 20 to 24 minutes until golden around the edges and set in the center.
Let them cool for 5 minutes before removing from the pan.
Serve warm with marinara on the side if you like. They come out cheesy, savory, and lightly crisp around the edges.
