A quick, no-fuss breakfast made with just a few simple ingredients.
Ingredients:
• 1 cup cottage cheese
• 2 large eggs
• 2 tbsp oat flour (or blended oats)
Instructions:
Add cottage cheese, eggs, and oat flour to a blender. Blend until mostly smooth.
Heat a non-stick skillet over medium heat and lightly grease if needed.
Pour small portions of batter into the pan (small pancakes work best).
Cook for 2–3 minutes until edges set and bubbles form.
Flip gently and cook another 1–2 minutes until golden.
Serve warm with your favorite toppings.
