Ingredients:
* 2 cups fresh or frozen cherries, pitted
* 3/4 cup granulated sugar
* 2 tablespoons lemon juice
* 1 teaspoon vanilla extract
* 1/4 teaspoon almond extract (optional, but amazing)
* 1 tablespoon chia seeds (optional, for thickness)
Instructions:
1. In a saucepan over medium heat, add cherries and sugar. Stir and let the cherries release their juices.
2. Cook for about 10–15 minutes, stirring occasionally, until cherries soften and break down.
3. Lightly mash the mixture with a spoon or potato masher for your desired texture.
4. Add lemon juice, vanilla extract, and almond extract. Stir well.
5. Continue simmering for another 10 minutes until thickened.
6. If using chia seeds, stir them in and cook for 2–3 more minutes.
7. Remove from heat and let cool—the jam will thicken more as it sets.
8. Transfer to a jar and refrigerate.
