Ingredients:

* 1 lb ground beef
* 1/2 onion, finely chopped
* 2 cloves garlic, minced
* 1 teaspoon cumin
* 1 teaspoon chili powder
* 1/2 teaspoon paprika
* Salt and pepper to taste
* 8 corn tortillas
* 2 cups red enchilada sauce
* 1 1/2 cups shredded Mexican blend cheese
* 2 tablespoons olive oil
* 1/4 cup chopped fresh cilantro
* 1/2 cup sour cream (for serving)

Instructions:

1. Preheat your oven to 375°F (190°C).
2. In a skillet over medium heat, cook the ground beef with chopped onion until browned. Drain excess fat.
3. Add garlic, cumin, chili powder, paprika, salt, and pepper. Cook for 2–3 minutes until fragrant.
4. Lightly fry the corn tortillas in olive oil for a few seconds per side until soft and pliable.
5. Dip each tortilla into the enchilada sauce, then fill with the beef mixture and a sprinkle of cheese. Roll tightly and place seam-side down in a baking dish.
6. Pour remaining enchilada sauce over the rolled tortillas and top with the rest of the cheese.
7. Bake for 20–25 minutes until bubbly and the cheese is melted.
8. Garnish with fresh cilantro and serve with sour cream on the side.
