Zucchini Cottage Cheese Spring Rolls (Air Fryer) 


Crispy, low-carb rolls with a creamy veggie filling.
Ingredients:
• 2 medium zucchinis, grated and squeezed dry
• 1 cup cottage cheese
• 1/2 cup shredded mozzarella cheese
• 1 egg
• 1/4 cup almond flour
• 1/2 tsp garlic powder
• 1/4 tsp salt
• Black pepper to taste
Instructions:
Squeeze as much moisture as possible from grated zucchini.
In a bowl, mix zucchini, cottage cheese, mozzarella, egg, almond flour, and seasonings.
Shape mixture into small log-shaped “rolls.”
Preheat air fryer to 375°F (190°C).
Place rolls in the basket, leaving space between them.
Air fry for 10–12 minutes until golden and firm.
Let cool slightly before serving.
