Veggie Packed Cottage Cheese Bread
Every time I whip up this cottage cheese bread, it feels like a cozy hug in my kitchen. Packed with veggies, it’s a fantastic way to sneak some nutrition into my family’s meals. The kids love it toasted with a bit of butter or as a base for their favorite sandwich fillings!
Ingredients:
200g grated carrot
200g grated courgette (squeezed to take out liquids)
200g oats
300g cottage cheese
2 tbsp flaxseeds
70g mixed seeds
2 large eggs
1/2 tbsp baking powder
1/2-1 tsp salt (to taste)
Instructions:
1. Preheat your oven to 180°C (350°F) and line a loaf pan with parchment paper.
2. In a large mixing bowl, combine the grated carrot, grated courgette, oats, cottage cheese, flaxseeds, mixed seeds, and salt.
3. In a separate bowl, whisk the eggs and baking powder until well combined.
4. Pour the egg mixture into the veggie mixture and stir until everything is evenly incorporated.
5. Transfer the mixture into the prepared loaf pan, spreading it out evenly.
6. Bake in the preheated oven for 45-50 minutes, or until the bread is golden and a toothpick inserted in the center comes out clean.
7. Allow it to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
