Preparing Your Kitchen and Tools
The first thing you need to do is make sure your oven is ready for the final stage of cooking. This air you are whisking into the eggs is what will make your frittata light and fluffy instead of dense and heavy. Set this bowl aside for a few minutes while you move on to the vegetables.
Cooking the Vegetables
Place your skillet on the stove over medium heat and add the tablespoon of olive oil. Let the oil get warm for about a minute and then toss in the chopped onions and the diced red bell pepper. Use a wooden spoon to stir them around so they get coated in the oil and cook them for about five minutes until the onions look translucent and the peppers are starting to get soft. Next you will add the zucchini slices and the minced garlic to the pan. Be careful not to burn the garlic because it can turn bitter very quickly if the heat is too high. Cook these for another three to four minutes until the zucchini has a little bit of color on it. Finally throw in the fresh spinach and stir it for just a minute until the leaves start to wilt and turn a bright green color.

Combining Everything in the Pan
Now that your vegetables are perfectly cooked and smelling wonderful you want to make sure they are spread out in an even layer across the bottom of the pan. Take your bowl of whisked eggs and pour the mixture slowly over the top of the vegetables. You might need to give the pan a little shake or use your spoon to make sure the egg liquid gets down into all the little spaces between the pieces of zucchini and pepper. Do not stir the mixture anymore once it is in the pan because you want it to set into a solid base. Let it cook on the stove for about two to three minutes without touching it. You will see the edges start to turn pale and firm up which is exactly what you want to see happen.
Adding the Cheese and Baking
Before you put the pan into the oven you should sprinkle your cheese of choice evenly over the top of the eggs. Whether you chose salty feta or melty cheddar the cheese will add a beautiful flavor and a nice golden crust to the finished dish. Now carefully pick up the pan using an oven mitt because the handle will be very hot and slide it onto the middle rack of your preheated oven. You will need to bake the frittata for about 10 to 12 minutes. You will know it is done when the center is no longer jiggly and the top has puffed up slightly like a souffle. If you want a bit more color on top you can turn on the broiler for the last sixty seconds but keep a very close eye on it so it does not burn.
Resting and Serving
Once you take the pan out of the oven it is very important to let it rest on the counter for about five minutes before you try to cut it. This resting time allows the eggs to finish setting completely and makes it much easier to get clean slices out of the pan. Use a knife or a pizza cutter to slice the frittata into wedges just like you would with a pie. You can sprinkle the fresh parsley or basil over the top to give it a pop of fresh color and flavor. This dish can be served warm right out of the pan or at room temperature or even cold from the fridge the next day. It pairs beautifully with a simple side salad or a piece of crusty bread to soak up any of the delicious juices.
