A delicious Tex-Mex twist on classic lasagna! Layers of seasoned ground beef, black beans, salsa, and melted cheese are stacked between flour tortillas and baked to bubbly perfection. A fun, family-friendly dinner that’s packed with flavor. 


Ingredients:
4 large flour tortillas (10-inch or 9-inch)
1½ pounds lean ground beef
½ cup sweet yellow onion, finely diced
2 tablespoons fresh garlic, minced
2 ounces mild taco seasoning (or 4 tablespoons homemade)
1 cup water
2 cups chunky mild salsa, divided
15 ounces black beans, drained and rinsed, divided
3 cups fiesta blend shredded cheese, divided
2 tablespoons chopped fresh cilantro (optional garnish)
Sour cream (optional topping)
Fresh pico de gallo (optional topping)
Instructions:
1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
2. In a large skillet over medium-high heat, cook the ground beef and diced onion until beef is browned and onion is softened, about 5-7 minutes. Add minced garlic and cook for 1 minute until fragrant. Drain excess fat.
3. Stir in the taco seasoning and water. Bring to a simmer and cook for 3-4 minutes until the mixture thickens slightly.
4. Remove from heat. Stir in 1 cup of the salsa and half of the black beans (about ¾ cup).
5. Assemble the lasagna: Spread a thin layer of the remaining salsa on the bottom of the prepared baking dish.
6. Place 2 tortillas in the bottom, overlapping slightly if needed.
7. Top with half of the meat mixture, half of the remaining black beans, and 1 cup of shredded cheese.
8. Add the remaining 2 tortillas as the next layer.
9. Top with the remaining meat mixture, remaining black beans, and 1 cup of shredded cheese.
10. Spread the remaining 1 cup of salsa over the top, then sprinkle with the remaining 1 cup of cheese.
11. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
12. Let rest for 10 minutes before slicing. Garnish with fresh cilantro and serve with sour cream or pico de gallo if desired.
