Because this recipe is intentionally streamlined to five ingredients, there’s plenty of room to customize around the edges. For a smokier profile, use a fajita seasoning that includes smoked paprika, or add a pinch of chipotle powder before cooking. If you prefer darker meat, boneless, skinless chicken thighs work beautifully and are a bit more forgiving if they cook on the longer side. You can also swap the canned diced tomatoes for fire-roasted tomatoes to deepen the flavor without adding extra ingredients.

For a slightly saucier filling, stir in a few tablespoons of tomato sauce or salsa at the end of cooking. If you like some textural contrast, reserve a handful of sliced peppers and quickly sauté them in a skillet just before serving, then fold them into the slow-cooked mixture for a mix of soft and crisp. To keep things lighter, serve the fajita mixture over a bed of shredded lettuce or cauliflower rice instead of tortillas. Finally, if sodium is a concern, choose a low-sodium fajita seasoning and no-salt-added canned tomatoes, then season to taste at the end so you stay in control of the salt level.
