Ingredients (makes 9–12 bars):
1 cup cottage cheese (blended smooth)
2 large eggs
½ cup almond flour (or oat flour for a softer texture)
½ cup pumpkin puree
1 tsp pumpkin pie spice (or ½ tsp cinnamon + ¼ tsp nutmeg + ¼ tsp ginger)
1 tsp vanilla extract
1–2 tbsp honey or maple syrup (adjust to taste)
1 tsp baking powder
Pinch of salt
Instructions:
Step 1: Preheat & Prepare
Preheat oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper.
Step 2: Blend Wet Ingredients
In a blender or food processor, mix cottage cheese, eggs, pumpkin puree, vanilla extract, and sweetener until smooth and creamy.
Step 3: Combine Dry Ingredients
In a separate bowl, whisk together almond flour (or oat flour), pumpkin spice, baking powder, and salt.
Step 4: Mix Together
Pour the wet mixture into the dry ingredients and stir gently until just combined.
Step 5: Bake
Spread the batter evenly in the prepared pan. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.

Allow the bars to cool completely before slicing into squares.
