For the filling:
- 2 pounds full-fat cream cheese, preferably Philadelphia brand
- 1 cup granulated sugar
- 1 tablespoon cornstarch, or 2 tablespoons all-purpose flour
- 1/4 teaspoon kosher salt
- 1/2 cup sour cream
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 large egg yolk
