This one sounds weird but trust me it works. Done in 10 minutes, super filling, and tastes way better than it should for how easy it is.
🌶️ Ingredients (serves 2)
• 4 large eggs
• 2 oz cream cheese, cubed
• ½ lb ground beef (80/20)
• 1 tsp taco seasoning (check label — get one with 0g sugar)
• 2 tbsp sour cream (for topping)
💁 Instructions
1️⃣ Brown the ground beef in a skillet over medium-high heat, breaking it apart. Drain extra grease if needed.
2️⃣ Sprinkle taco seasoning over the beef and stir it around for about 30 seconds.
3️⃣ Lower heat to medium. Crack all 4 eggs right into the pan with the beef. Let them sit for about 10 seconds then start scrambling everything together.
4️⃣ Drop in the cream cheese cubes. Keep stirring gently — the cream cheese will melt into the eggs and make everything creamy and rich.
5️⃣ Pull it off heat when eggs are just set. Don’t overcook or it gets rubbery.
6️⃣ Top with sour cream and serve straight from the pan.
