Okay hear me out — Cream Cheese Taco Scramble 
This one sounds weird but trust me it works. Done in 10 minutes, super filling, and tastes way better than it should for how easy it is.
• 4 large eggs
• 2 oz cream cheese, cubed
• ½ lb ground beef (80/20)
• 1 tsp taco seasoning (check label — get one with 0g sugar)
• 2 tbsp sour cream (for topping)
— Add a handful of shredded cheddar on top if you want extra cheesy
— Swap beef for chorizo for a spicier version
— Leftovers reheat well the next morning
