Low Carb 3-Ingredient Sausage Bites

Ingredients
1 pound uncooked pork breakfast sausage (mild or hot, casings removed if needed)
2 cups shredded sharp cheddar cheese, tightly packed
1/3 cup almond flour (finely ground, blanched works best)
Directions
Preheat your oven to 375°F (190°C). Line a large baking sheet with parchment paper so the cheese doesn’t stick and cleanup stays easy.
In a large mixing bowl, add the uncooked pork sausage, shredded cheddar cheese, and almond flour.
Use clean hands or a sturdy spoon to mix everything together until the almond flour and cheese are evenly distributed and the mixture feels cohesive. It will be a little sticky but should hold together when pressed.
Scoop about 1 tablespoon of the mixture and roll it into a ball, then gently flatten it into a thick coin or small round about 1/2 inch thick. This shape helps them cook through evenly and lets the cheese bubble around the edges.
Place each sausage round on the prepared baking sheet, leaving a little space between them so the cheese can melt and crisp without merging into one big piece.
Bake in the preheated oven for 14–18 minutes, or until the sausage is cooked through, the centers look juicy, and the cheese around the edges is bubbly and deep golden brown.
If you want extra crispy edges, switch the oven to broil for 1–2 minutes at the end, watching closely so the cheese doesn’t burn.
