Chewy Snickers Brownies
Ingredients:

Dutch-processed cocoa 1/3 cup
Instant espresso 1 ½ teaspoons
Boiling water 1/2 cup + 2 tablespoons
Unsweetened chocolate, finely chopped 2 ounces
Unsalted butter, melted 4 tablespoons (1/2 stick)
Vegetable oil 1/2 cup + 2 tablespoons
Large eggs 2
Large egg yolks 2
Vanilla extract 2 teaspoons
Sugar 2 ½ cups
Unbleached all-purpose flour 1 ¾ cups
Table salt 3/4 teaspoon
“Fun-size” Snickers, coarsely chopped 16
Instructions:
Preheat Oven & Prepare Pan: Preheat your oven to 350°F (175°C). Butter the bottom and sides of a 9×13 inch metal baking pan. Line the pan with parchment paper: Place one long piece of parchment paper in the bottom of the pan, letting it extend up two sides and overhang slightly on both ends. Place another piece of parchment paper in the same manner, perpendicular to the first sheet. This crisscross method creates “slings” that will make it easy to remove the baked brownies from the pan. Butter the parchment paper thoroughly.
Prepare Chocolate Base: In a large mixing bowl, whisk together the 1/3 cup Dutch-processed cocoa, 1 ½ teaspoons instant espresso, and 1/2 cup plus 2 tablespoons boiling water until the mixture is smooth. Add the 2 ounces finely chopped unsweetened chocolate and continue to whisk until the chocolate is completely melted and incorporated. Whisk in the 4 tablespoons melted unsalted butter and 1/2 cup plus 2 tablespoons vegetable oil until smooth.
