This Mounds Poke Cake is a decadent, multi-layered dessert that brings together a rich chocolate base, a creamy coconut center, and a smooth chocolate ganache topping.
Ingredients
For the Cake:
1 box chocolate cake mix
Ingredients listed on box (eggs, oil, water)
For the Coconut Filling:
1 can (14 oz) sweetened condensed milk
1 can (13.5 oz) coconut milk
1 cup sweetened shredded coconut
For the Topping:
1 tub whipped topping (or homemade whipped cream)
1/2 cup shredded coconut (toasted optional)
1/2 cup chocolate chips or chocolate syrup
Preparation
Step 1:
Preheat oven according to cake mix instructions and prepare a baking pan.
Step 2:
Prepare and bake the chocolate cake as directed.
Step 3:
Remove cake from oven and let cool for about 10 minutes.
Step 4:
Use the handle of a spoon or skewer to poke holes all over the cake.
Step 5:
In a bowl, mix sweetened condensed milk, coconut milk, and shredded coconut.
Step 6:
Pour the coconut mixture evenly over the warm cake, letting it soak into the holes.
Step 7:
Allow the cake to cool completely.
Step 8:
Spread whipped topping evenly over the surface.
Step 9:
Sprinkle shredded coconut across the top.
Step 10:
Drizzle melted chocolate or chocolate syrup over everything.
Step 11:
Refrigerate for at least 2 hours before serving.
