Monterey Jack & Green Chile Chicken Gratin
This chicken gratin has become a go-to in our house—it’s creamy, cheesy, and packed with flavor. The kids adore the gooey Monterey Jack on top, and I love how easy it is to whip up on a busy weeknight!
Ingredients:
2 cups cooked chicken (diced)
1 cup cottage cheese (blended)
1 small can diced green chiles (strained bone-dry)
1 cup shredded Monterey Jack cheese
Instructions:
1. Begin by draining the chiles. Let them sit in a fine-mesh sieve for about 5 minutes until no more liquid drips out. This step is crucial to prevent a soggy gratin.
2. In a mixing bowl, combine the diced chicken, dry chiles, and blended cottage cheese. Stir until everything is evenly mixed.
3. Transfer the mixture to a shallow baking dish, spreading it out evenly.
4. Top with a generous layer of shredded Monterey Jack cheese, making sure to cover the mixture completely.
5. Preheat your oven to 375°F (190°C) and bake for 25 minutes, or until the cheese is bubbly and golden brown on top.
