Lemon Blueberry Cottage Cheese Protein Bites 🍋🫐
Soft, no-bake bites with a creamy texture and a fresh citrus flavor.
Ingredients:
• 1 cup cottage cheese
• 1 cup almond flour
• ¼ cup vanilla protein powder
• 2 tablespoons honey or maple syrup
• 1 tablespoon lemon zest
• 2 tablespoons lemon juice
• ½ teaspoon vanilla extract
• ½ cup dried blueberries (or fresh, finely chopped)
Instructions:
Blend cottage cheese until smooth.
In a bowl, mix almond flour and protein powder.
Add blended cottage cheese, honey, lemon zest, lemon juice, and vanilla.
Stir until a thick dough forms.
Fold in blueberries.
Chill mixture for 15–20 minutes to firm up.
Roll into small bite-sized balls.
Store in the fridge in an airtight container.
