Keto Cottage Cheese Cheddar Bread Loaf

Ingredients (makes about 1 loaf):
2 cups cottage cheese
4 large eggs
2 cups almond flour
1 cup shredded cheddar cheese
1/4 cup grated Parmesan cheese
1 tbsp baking powder
1 tsp garlic powder
1/2 tsp salt
Step 1: Preheat & Prepare
Preheat oven to 350°F (175°C). Line a loaf pan with parchment paper or grease lightly.
Step 2: Mix the Batter
In a bowl, blend cottage cheese and eggs until smooth. Add almond flour, cheddar cheese, Parmesan, baking powder, garlic powder, and salt. Stir until fully combined.
Step 3: Pour into Pan
Pour batter into the prepared loaf pan. Smooth the top with a spatula.
Step 4: Bake & Cool
Bake for 35-40 minutes, or until golden and a toothpick inserted comes out clean. Cool completely before slicing.
