Italian Turkey Sausage & Fennel Pizza Bites

Ingredients:
1 cup cottage cheese (small curd)
1 large egg
1/2 cup oat flour
1/2 cup ground turkey sausage (browned and drained dry)
1/2 tsp fennel seeds (crushed)
Instructions:
1. Meat Prep: In a skillet over medium heat, sautΓ© the ground turkey sausage until it is very brown. Make sure to drain it thoroughly on a paper towel to remove excess fat and moisture, as this will help achieve that crispy edge.
2. Batter: In a mixing bowl, whisk together the cottage cheese, egg, and oat flour until well combined. Gently stir in the crushed fennel and the dry sausage crumbles.
3. Bake: Scoop the mixture into a mini-muffin tin, filling each cup about three-quarters full. Bake in a preheated oven at 375Β°F for 18β20 minutes or until golden brown and crispy on the edges.
