Greek Stuffed Zucchini Boats with Spiced Beef, Feta and Hot Honey Drizzle
Ingredients
For the Zucchini
4 zucchinis, halved and scooped
2 tbsp olive oil
Β½ tsp salt
ΒΌ tsp black pepper
For the Filling
1 lb (450 g) ground beef
2 cloves garlic, minced
1 tsp paprika
1 tsp oregano
Β½ tsp salt
ΒΌ tsp black pepper
For the Topping
Β½ cup (75 g) feta cheese, crumbled
For the Hot Honey
2 tbsp honey
1 tsp chili flakes
Garnish
Fresh parsley or dill
Directions
Preheat oven to 375Β°F (190Β°C).
Brush zucchini with olive oil, salt, and black pepper, then place in a baking dish.
In a skillet, cook ground beef with garlic, paprika, oregano, salt, and black pepper until browned.
Fill zucchini boats with beef mixture.
Bake for 20β25 minutes until zucchini is tender.
Mix honey and chili flakes, then drizzle over zucchini boats.
Top with feta and garnish with fresh herbs.
Serve warm.
