Ingredients (makes about 4 flatbreads):
1 cup cottage cheese
1 cup almond flour
2 large eggs
1 teaspoon garlic powder
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
Step 1: Heat & Prep
Warm a non-stick skillet over medium heat and lightly coat it with olive oil.
Step 2: Combine Ingredients
In a mixing bowl, add cottage cheese, almond flour, eggs, garlic powder, oregano, basil, salt, and black pepper. Mix until a soft dough comes together.
Step 3: Shape & Cook
Split the dough into 4 equal portions. Flatten each into a round flatbread shape, then cook in the skillet for about 3–4 minutes per side, until golden brown and cooked through.
Step 4: Serve & Enjoy
Transfer from the skillet and allow to cool slightly before serving. Enjoy warm or save for later.
