Ingredients:
* 2 cups cauliflower florets (bite-sized)
* 1 cup white vinegar
* 1 cup water
* 1 tbsp salt
* 1 tbsp sugar
* 3 cloves garlic, smashed
* 1 tsp black peppercorns
* 1/2 tsp red pepper flakes
* 1 tsp mustard seeds
* Fresh dill sprigs
Instructions:
1. Bring a pot of salted water to a boil and blanch the cauliflower for 2β3 minutes until slightly tender but still crisp. Drain and cool.
2. In a saucepan, combine vinegar, water, salt, sugar, peppercorns, red pepper flakes, and mustard seeds. Bring to a simmer.
3. Pack cauliflower, garlic, and dill into a clean jar.
4. Pour the hot pickling liquid over the contents, ensuring everything is fully submerged.
5. Let cool to room temperature, then seal and refrigerate for at least 24 hours before enjoying.
