Heat the oil in a large skillet over medium-high heat.

Add the ground beef, breaking it apart with a wooden spoon. Cook until browned, about 5–6 minutes.

Season with cumin, chili powder, paprika, coriander, oregano, cayenne (if using), salt, and black pepper. Stir well.

Add beef broth and reduce heat to low. Simmer for 5 minutes until slightly thickened.

Step 2 – Prepare the Cheese Blend

In a bowl, combine cheddar, Monterey Jack, and queso fresco.

Step 3 – Assemble the Chimichangas

Lay out a tortilla on a clean surface.

Spread a thin layer (about 1 tsp) of sour cream or cream cheese in the center.

Spoon about ½ cup of the beef mixture onto the center of the tortilla.

Fold the sides in toward the center, then fold the bottom over the filling and roll tightly like a burrito.

Step 4 – Fry the Chimichangas
Shallow Fry Method:

Heat 2–3 cm (1 inch) of vegetable oil in a large skillet over medium heat.

Once the oil reaches about 180°C / 350°F, place chimichangas seam-side down.

Fry for 2–3 minutes per side until golden brown and crispy.

Transfer to a paper towel–lined plate to drain excess oil.
Air Fryer Method (Healthier):

Preheat air fryer to 200°C / 400°F.

Brush chimichangas lightly with oil or cooking spray.

Place seam-side down in the basket.
-
Air fry for 8–10 minutes, flipping halfway, until golden.
Oven-Baked Method:

Preheat oven to 200°C / 400°F.

Brush chimichangas with oil or melted butter.
-
Bake for 20–25 minutes, flipping halfway.
Step 5 – Serve

Place the crispy chimichangas on a plate.

Add toppings like sour cream, guacamole, fresh salsa, or shredded lettuce.

Serve hot while the cheese is still melty.
