Creamy Bacon Pea Salad

For the Salad

  • 4 cups (about 500g) frozen sweet peas, thawed (see note)

  • 6 slices thick-cut bacon, cooked crisp and crumbled

  • 1/2 cup (about 70g) sharp cheddar cheese, small dice

  • 1/4 cup red onion, finely minced

  • 2 tablespoons fresh parsley or chives, chopped (plus more for garnish)

For the Creamy Dressing

  • 1/3 cup full-fat sour cream

  • 1/3 cup plain Greek yogurt (2% or whole milk)

  • 1 tablespoon apple cider vinegar (or white wine vinegar)

  • 1 tablespoon honey (or maple syrup)

  • 1/2 teaspoon Dijon mustard

  • 1/2 teaspoon garlic powder

  • 1/4 teaspoon sea salt

  • 1/4 teaspoon black pepper (plus extra for finishing)
