Cottage Cheese Zucchini Muffins

Dry Ingredients:

    • 2 cups (250g) all-purpose flour

    • 2 tsp baking powder

    • 1/2 tsp baking soda

    • 1 tsp salt

    • 1/2 tsp freshly ground black pepper

    • 1 tsp garlic powder

    • 1/2 tsp smoked paprika (optional, for a subtle warmth)

  • 1 cup (100g) finely grated sharp cheddar cheese

Wet Ingredients:

  • 1 1/2 cups (180g) grated zucchini (about 1 medium zucchini, unpeeled)

  • 1 cup (225g) full-fat or low-fat cottage cheese (small curd preferred)

  • 2 large eggs

  • 1/3 cup (80ml) milk (any kind)

  • 1/4 cup (60ml) olive oil or melted, cooled butter

  • 2 tbsp chopped fresh chives or dill (plus extra for garnish)
