Cottage Cheese Sweet Potato Pie Bars

Ingredients (makes about 16 bars):
2 cups cottage cheese
2 cups mashed sweet potatoes
4 large eggs
1/4 cup maple syrup
2 tsp vanilla extract
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp salt
1 cup almond flour
1/4 cup coconut oil, melted
Step 1: Preheat & Prep
Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
Step 2: Blend Wet Ingredients
In a blender or food processor, combine cottage cheese, mashed sweet potatoes, eggs, maple syrup, vanilla, cinnamon, nutmeg, and salt. Blend until smooth.
Step 3: Add Dry Ingredients
Transfer mixture to a bowl. Stir in almond flour and melted coconut oil until fully combined and no lumps remain.
Step 4: Bake & Cool
Pour batter into prepared pan, spreading evenly. Bake for 28-32 minutes until set and edges are golden. Cool completely in pan before cutting into 16 bars.
