Cottage Cheese & Spinach Crustless Quiche 
Light, fluffy, and packed with flavor, this easy quiche comes together with simple ingredients.
Ingredients:
• 1 cup cottage cheese
• ½ cup plain Greek yogurt
• 4 large eggs
• 1 cup fresh spinach, chopped
• ½ cup shredded mozzarella cheese
• ½ cup shredded cheddar cheese
• ¼ cup onion, finely diced
• ½ teaspoon garlic powder
• ½ teaspoon salt
• ¼ teaspoon black pepper
• ¼ teaspoon paprika
Instructions:
Preheat oven to 375°F. Lightly grease an 8×8-inch baking dish or pie dish.
In a bowl, whisk eggs, cottage cheese, and Greek yogurt until smooth.
Stir in spinach, mozzarella, cheddar, onion, and seasonings.
Pour mixture into the prepared dish and spread evenly.
Bake for 30–35 minutes, until set in the center and lightly golden on top.
Let cool for 5–10 minutes before slicing.
Store in the fridge for easy grab-and-go meals—great for breakfast, lunch, or even a light dinner.
