Coconut Cream Cottage Cheese Snack Loaf

Ingredients:
• 1 cup cottage cheese
• 2 large eggs
• 1/3 cup sugar
• 1/4 cup melted butter
• 1 teaspoon vanilla extract
• 1 1/4 cups all purpose flour
• 1 teaspoon baking powder
• 1/4 teaspoon salt
• 3/4 cup shredded coconut
• 2 tablespoons milk
Methods:
Heat oven to 350 F and line a loaf pan with parchment paper or grease it well.
Blend the cottage cheese, eggs, sugar, melted butter, vanilla, and milk until smooth and creamy.
In a bowl, whisk together the flour, baking powder, and salt.
