Coconut Banana Cottage Cheese Breakfast Cake

Ingredients:
• 1 cup cottage cheese
• 2 ripe bananas
• 2 large eggs
• 1/4 cup honey
• 1 teaspoon vanilla extract
• 1 1/4 cups all purpose flour
• 1 teaspoon baking powder
• 1/4 teaspoon salt
• 3/4 cup shredded coconut
• 2 tablespoons melted butter

Methods:

Heat oven to 350 F and line an 8 inch square pan or loaf pan with parchment paper.
Blend the cottage cheese, bananas, eggs, honey, vanilla, and melted butter until smooth and creamy.
In a bowl, whisk together the flour, baking powder, and salt until evenly mixed.
Stir the wet mixture into the dry ingredients just until combined, then fold in the shredded coconut gently.
Spread the batter into the prepared pan and smooth the top into an even layer.
Bake for 28 to 34 minutes until lightly golden and a tester comes out with a few moist crumbs.
Cool before slicing. The banana keeps it moist while the coconut gives every bite a sweet, cozy finish.
