Start by finely dicing the chicken breasts into very small cubes. Smaller pieces cook evenly and help the fritters hold together better.
Pat the chicken dry with paper towels before mixing. Removing excess moisture improves crispiness during frying.
Step 2: Mix the Ingredients
In a large mixing bowl, combine:

- Diced chicken
- Eggs
- Mayonnaise
- Flour
- Mozzarella cheese
- Parsley
- Green onions
- Garlic
- Salt
- Pepper
- Paprika
Mix everything thoroughly until fully combined.
The mixture should resemble a thick batter that easily holds together when scooped.
Step 3: Rest the Mixture
Allow the chicken mixture to rest for about 10 minutes.
This resting time helps the flour absorb moisture and allows the flavors to blend together.
Step 4: Heat the Pan
Place a large non-stick skillet over medium heat and add olive oil.
Allow the oil to heat properly before adding the fritters. Properly heated oil ensures crispy edges and prevents sticking.
Step 5: Cook the Fritters
Using a spoon or cookie scoop, place portions of the chicken mixture into the skillet.
Flatten slightly using the back of the spoon.
Cook each fritter for about 3–4 minutes per side or until golden brown and fully cooked inside.
The internal temperature of the chicken should reach 165°F (74°C).
Avoid overcrowding the pan, as this lowers the oil temperature and reduces crispiness.
