Caramel Crunch Cheesecake Fruit Salad
A creamy, dreamy fruit salad that tastes like cheesecake! Fresh fruit is folded into a smooth cream cheese and caramel mixture, then topped with crunchy granola or toffee bits. Perfect for potlucks, parties, or a sweet treat any day.
Ingredients:
8 oz cream cheese, softened
¼ cup granulated sugar
1 teaspoon vanilla extract
1 (8 oz) container whipped topping (Cool Whip), thawed
1 cup caramel sauce, plus extra for drizzling
2 cups sliced strawberries
2 cups seedless grapes, halved
2 cups diced apples (such as Granny Smith or Gala)
1 cup diced pineapple (fresh or canned, drained)
1 cup granola or crushed caramel toffee bits (for crunch)
1 tablespoon lemon juice
Instructions:
1. In a large bowl, beat the softened cream cheese, sugar, and vanilla extract with an electric mixer until smooth and creamy.
2. Fold in the whipped topping until well combined.
3. Add the caramel sauce and mix until smooth.
4. In a separate bowl, toss the diced apples with lemon juice to prevent browning.
5. Add the strawberries, grapes, apples, and pineapple to the cream cheese mixture. Gently fold until all the fruit is coated.
6. Transfer to a serving bowl. Sprinkle the granola or crushed toffee bits over the top just before serving.
7. Drizzle with extra caramel sauce if desired.
8. Serve immediately, or refrigerate for up to 2 hours before serving (add the crunchy topping just before serving to keep it crisp).
