Brownie Batter Cottage Cheese Freezer Bars

Ingredients:
• 1 cup cottage cheese
• 2 tablespoons cocoa powder
• 1/4 cup peanut butter
• 2 tablespoons honey
• 1 teaspoon vanilla extract
• 1/4 teaspoon salt
• 1 cup quick oats
• 2 tablespoons mini chocolate chips
• 2 tablespoons chopped pecans, optional

Methods:

Line an 8 x 4 inch loaf pan or small dish with parchment paper.
Blend the cottage cheese, cocoa powder, peanut butter, honey, vanilla, and salt until completely smooth and glossy.
Stir in the quick oats until the mixture thickens into a creamy brownie batter texture.
Fold in the mini chocolate chips and chopped pecans if using for extra texture and little chocolate pockets.
Spread the mixture into the prepared pan and smooth the top evenly with the back of a spoon.
Freeze for 2 to 3 hours until firm enough to slice into bars.
Let each bar sit for 1 to 2 minutes before eating so the texture turns creamy and fudge like in the middle.
