Prepare the Blueberry Swirl:
- In a small saucepan over medium heat, combine the blueberries, lemon juice, and water.
- Cook for 3–5 minutes, stirring occasionally, until the blueberries break down and the mixture thickens slightly.
- Remove from heat and let it cool for a few minutes.

Make the Yogurt Mixture:
- In a medium bowl, mix the Greek yogurt, honey (or maple syrup), and vanilla extract until smooth.

Assemble the Bites:
- Spoon the yogurt mixture into silicone molds or an ice cube tray, filling each about 3/4 full.
- Add a small spoonful of the blueberry mixture on top of each yogurt portion.
- Use a toothpick or skewer to gently swirl the blueberry sauce into the yogurt.

Freeze:
- Place the molds or tray in the freezer and freeze for at least 2–3 hours, or until fully set.

Serve:
- Once frozen, pop the bites out of the molds and enjoy! Store in an airtight container in the freezer for up to 2 weeks.
