Blueberry Swirl Yogurt Bites

    • Prepare the Blueberry Swirl:

      • In a small saucepan over medium heat, combine the blueberries, lemon juice, and water.
      • Cook for 3–5 minutes, stirring occasionally, until the blueberries break down and the mixture thickens slightly.
      • Remove from heat and let it cool for a few minutes.
    • Make the Yogurt Mixture:

      • In a medium bowl, mix the Greek yogurt, honey (or maple syrup), and vanilla extract until smooth.
    • Assemble the Bites:

      • Spoon the yogurt mixture into silicone molds or an ice cube tray, filling each about 3/4 full.
      • Add a small spoonful of the blueberry mixture on top of each yogurt portion.
      • Use a toothpick or skewer to gently swirl the blueberry sauce into the yogurt.
    • Freeze:

      • Place the molds or tray in the freezer and freeze for at least 2–3 hours, or until fully set.
    • Serve:

      • Once frozen, pop the bites out of the molds and enjoy! Store in an airtight container in the freezer for up to 2 weeks.

Notes

  • For a creamier texture, stir in a tablespoon of coconut cream or almond butter into the yogurt mixture.
  • Substitute blueberries with raspberries, blackberries, or a mix for a different flavor.
  • If you don’t have silicone molds, you can spread the yogurt mixture onto a parchment-lined baking sheet, swirl in the blueberry sauce, and freeze before breaking into bite-sized pieces.
