Blueberry Almond Cottage Cheese Breakfast Bake 🫐🥧
A soft, protein-packed bake with a lightly sweet, nutty flavor.
Ingredients:
• 1 cup cottage cheese
• 3 large eggs
• 1/2 cup almond flour
• 1/4 cup sliced almonds
• 1/3 cup blueberries (fresh or frozen)
• 2–3 tbsp honey or sugar-free sweetener
• 1 tsp vanilla extract
• 1/2 tsp baking powder
• Pinch of salt
Instructions:
Preheat oven to 350°F (175°C). Grease a small baking dish.
In a bowl, whisk eggs, cottage cheese, sweetener, and vanilla until smooth.
Add almond flour, baking powder, and salt. Mix until combined.
Fold in blueberries and half of the sliced almonds.
Pour into the baking dish and sprinkle remaining almonds on top.
Bake for 30–35 minutes until set and lightly golden.
Let cool slightly before slicing and serving.
