Beef Stew with Vegetables in a jar

Place equal portions of beef into each quart jar, filling approximately one-third of the jar.

Add potatoes, carrots, celery, and onions evenly among the jars.

Sprinkle a small amount of salt, pepper, garlic powder, and thyme into each jar. Add a portion of bay leaf if desired.

Leave about 1 inch of headspace at the top of each jar.

Carefully ladle hot beef broth into the jars, covering the meat and vegetables while maintaining the recommended 1-inch headspace.

Use a bubble remover tool to release trapped air bubbles. Add additional broth if necessary to maintain proper headspace.

Wipe jar rims with a clean damp cloth. Place lids on jars and tighten bands to fingertip tightness.

Pressure Canning Instructions

Place filled jars into the prepared pressure canner.

Lock the lid according to the manufacturer’s instructions.

Allow steam to vent steadily for 10 minutes before applying the pressure regulator.

Process quart jars at the pressure recommended for your altitude:

  • 10 pounds pressure for weighted-gauge canners
  • 11 pounds pressure for dial-gauge canners

Process quart jars for 90 minutes.

Maintain steady pressure throughout the entire processing time.

When processing is complete, turn off the heat and allow the canner to cool naturally. Do not force-cool the canner.

Once pressure returns to zero, carefully remove the lid and let jars rest for 10 minutes before removing them.

Place jars on a towel-lined surface and allow them to cool undisturbed for 12 to 24 hours.

Checking the Seals

After cooling, remove the bands and check each lid for a proper seal.

A properly sealed lid will not flex when pressed in the center.

Store sealed jars in a cool, dark location for up to one year for best quality.

Any unsealed jars should be refrigerated and consumed within several days.

This beef stew is a complete meal on its own, but it pairs wonderfully with:

  • Cornbread
  • Side salad
  • Steamed green beans

To serve, simply pour the contents into a saucepan and heat until hot throughout. Simmer for 10 to 15 minutes to allow flavors to fully develop.
