Start by placing a large, deep skillet on medium heat. Add the unsalted butter to the pan and allow it to melt completely. You want the butter to be melted but not browned, as this could affect the final flavor of the sauce. Stir occasionally to prevent the butter from burning.

Step 2: Add Sugar and Spices

Once the butter has fully melted, add the dark brown sugar, rum, vanilla extract, and ground cinnamon into the pan. Stir the ingredients together to form a smooth, rich sauce. Allow the mixture to come to a low simmer, stirring occasionally. The sugar should dissolve completely, and the sauce will start to thicken slightly.

Let the mixture simmer for a minute or two. You’ll notice the sauce thickening as it reduces. The smell of caramelizing sugar and vanilla will start to fill the air—this is the point where you can start to get excited!

Step 4: Add Bananas and Walnuts

Now it’s time to add the sliced bananas into the skillet. Carefully place the banana slices into the sauce, making sure each piece is coated. Add the coarsely chopped walnuts as well, if you’re using them. Stir gently to coat the bananas and nuts with the sauce. Cook for an additional 1 to 2 minutes. The bananas should begin to soften, and the sauce will thicken slightly as it continues to cook.

Step 5: Serve

Once the bananas are soft and the sauce is nicely thickened, it’s time to serve. Spoon the banana mixture over generous scoops of vanilla ice cream. The warm sauce will melt the ice cream slightly, creating a luscious, creamy base for the bananas. Serve immediately while it’s hot and bubbling.
