Apple Cinnamon Cottage Cheese Donut Holes

Ingredients:

β€’ 2 large eggs
β€’ 1/4 cup honey
β€’ 1 teaspoon vanilla extract
β€’ 1 cup all purpose flour
β€’ 1 teaspoon baking powder
β€’ 1 teaspoon cinnamon
β€’ 1/4 teaspoon salt
β€’ 3/4 cup finely diced apples
β€’ 2 tablespoons melted butter
β€’ 2 tablespoons cinnamon sugar, optional

Methods:

Heat oven to 350 F and grease a mini muffin pan well so the donut holes release easily after baking.
Blend the cottage cheese, eggs, honey, vanilla, and melted butter until smooth and creamy.
In a bowl, whisk together the flour, baking powder, cinnamon, and salt until evenly combined.
Stir the wet mixture into the dry ingredients just until combined, then fold in the diced apples gently.
Spoon the batter into the mini muffin cups, filling each about three quarters full.
Bake for 10 to 13 minutes until puffed, lightly golden, and set in the center.
Let them cool slightly, then brush lightly with extra melted butter and roll in cinnamon sugar if using. They come out soft, sweet, and packed with cozy apple flavor.
