Methods:
Heat oven to 350 F and line an 8 inch square pan or loaf pan with parchment paper.
Blend the cottage cheese, eggs, honey, melted butter, vanilla, lemon zest, and lemon juice until smooth and creamy.
In a bowl, whisk together the flour, baking powder, and salt until evenly mixed.
Stir the wet mixture into the dry ingredients just until combined, then fold in the shredded coconut and most of the diced strawberries.
Spread the batter into the pan and scatter the remaining strawberries over the top for a pretty finish.
Bake for 30 to 36 minutes until lightly golden and the center feels set when touched.
Cool before slicing. The crumb stays soft and tender with bright lemon flavor, juicy strawberries, and sweet coconut in every bite.
