Creamy Garlic Ranch Chicken Potato Skillet

Ingredients:
• 1 pound chicken breast, diced
• 1 pound baby potatoes, halved
• 1 tablespoon olive oil
• 3/4 cup cottage cheese
• 1/2 cup shredded mozzarella
• 1 tablespoon ranch seasoning
• 2 cloves garlic, minced
• 1/2 teaspoon black pepper
• 1/2 teaspoon salt
• 2 tablespoons chopped green onion

Methods:

Boil the baby potatoes in salted water for 8 minutes, then drain well so they are tender inside before they hit the skillet.
Heat olive oil in a large skillet over medium high heat and cook the chicken until browned and fully cooked.
Add the potatoes to the skillet and let them cook for several minutes so the cut sides turn golden and lightly crisp.
