March Madness Dill Pickle Ranch Smash Chicken Crumble Skillet

March Madness Dill Pickle Ranch Smash Chicken Crumble Skillet
I made this when I wanted something bold, creamy, and shareable, but not another slider, cup, or roll. The chicken stays juicy, the dill pickle brings that sharp tang people remember, and the ranch cottage cheese filling bubbles under a savory crumbly top that turns lightly golden in the oven. It is warm, cozy, and made for a snack dinner table.
Ingredients:
1 pound ground chicken
1 tsp garlic powder
1 tbsp ranch seasoning
1/3 cup chopped dill pickles
2 tbsp pickle juice
1/2 cup cottage cheese
1/2 cup shredded mozzarella
3/4 cup biscuit mix
Black pepper
Methods:
Heat oven to 400 F and grease a small oven safe skillet.
Cook chicken with garlic powder and black pepper until browned and crumbly.
Stir in ranch seasoning, pickles, pickle juice, cottage cheese, and mozzarella until creamy.
Spread the filling into the skillet in one even layer.
Rub biscuit mix with a spoonful of water or melted butter until crumbly.
Scatter the crumb mixture loosely over the chicken so some filling still peeks through.
Bake 18 to 22 minutes until bubbling and lightly golden on top.
Cool 5 minutes before spooning warm servings.
