Impossible Coconut Pie
This pie is an absolute delight in my kitchen! It’s creamy, coconutty, and has a magical texture that my kids adore. I love how it’s so simple to whip up, and it’s always a hit at family gatherings.
Ingredients:
2 cups whole milk
3/4 cup sugar
1/4 cup biscuit mix (I used Bisquick)
4 large eggs
1/4 cup (1/2 stick) unsalted butter, room temperature
1 teaspoon vanilla extract
1/2 teaspoon coconut extract
1/4 teaspoon salt
1 cup shredded coconut, plus extra for garnish, optional
Instructions:
1. Preheat the oven to 350º F and lightly grease a 9-inch pie plate with butter or non-stick spray.
2. In a blender or food processor, pour in the milk, sugar, biscuit mix, eggs, and butter.
3. Add the vanilla and coconut extracts, followed by the salt and shredded coconut.
4. Cover the blender or food processor and pulse for 2-3 minutes, or until everything is well blended and frothy.
5. Pour the mixture into the greased pie pan and place it in the oven.
6. Bake for 38-42 minutes or until the center is just set. Remove from the oven and let cool for 15 minutes before serving.
