Peanut Butter Banana Cottage Cheese Pancake Bites
These pancake bites are a delightful way to start the day! Packed with protein and the natural sweetness of bananas, these little treats are perfect for busy mornings or a fun snack after school. My kids love them, and I love knowing they’re getting a nutritious boost!
Ingredients:
1 cup cottage cheese
1 ripe banana, mashed
1/2 cup peanut butter
1/2 cup rolled oats
1 tsp cinnamon
1 tsp vanilla extract
Instructions:
1. In a large bowl, combine the cottage cheese and mashed banana until smooth.
2. Stir in the peanut butter, rolled oats, cinnamon, and vanilla extract until well mixed.
3. Preheat a nonstick skillet over medium heat and lightly grease with cooking oil if needed.
4. Drop spoonfuls of the mixture onto the skillet, forming small pancake bites.
5. Cook for 2–3 minutes on each side, or until golden brown and cooked through.
6. Allow to cool slightly before serving.
Yields: Approximately 10–12 pancake bites
