Single-Serve Cottage Cheese Mini Quiche

Ingredients (makes about 1 quiche):
1/2 cup cottage cheese
1 large egg
2 tbsp chopped spinach
1 tbsp diced onion
1 tbsp shredded cheddar cheese
1/4 tsp garlic powder
salt and pepper to taste
Step 1: Preheat & Prep
Preheat oven to 350°F (175°C). Grease a small ramekin or muffin tin cup.
Step 2: Mix Ingredients
In a bowl, whisk cottage cheese and egg until smooth. Stir in spinach, onion, cheddar, garlic powder, salt, and pepper.
Step 3: Pour into Dish
Pour mixture into the prepared ramekin, filling to the top.
Step 4: Bake
Bake for 18-22 minutes, until set, puffed, and golden on top.
