Ingredients (makes 1 loaf / about 10 slices)
2 cups cottage cheese (480 ml | 440 g)
2 ripe bananas, mashed (≈240 ml | 230 g)
3 large eggs (≈150 ml | 165 g without shell)
1 tsp vanilla extract (5 ml)
1 tsp baking powder (5 ml | 4 g)
1 tsp baking soda (5 ml | 5 g)
1 tsp cinnamon (2.5 g)
½ tsp salt (2 g)
½ cup chopped walnuts (optional) (120 ml | 60 g)

Step 1 – Preheat & Prep
Preheat oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
Step 2 – Blend Wet Ingredients
In a large bowl, combine cottage cheese, mashed bananas, eggs, and vanilla extract. Mix or blend until smooth and creamy.
Step 3 – Add Dry Ingredients
Add baking powder, baking soda, cinnamon, and salt. Stir gently until fully combined. Fold in chopped walnuts if using.
