Step 1: Prepare the Pecans
Toast the Pecans (Optional): Preheat your oven to 350°F (175°C). Spread the pecan halves on a baking sheet and toast them in the oven for about 5-7 minutes, or until fragrant. Allow them to cool completely before assembling the turtles.
Step 2: Arrange the Pecans
Line a baking sheet with parchment paper or a silicone baking mat.
Group 3-4 pecan halves into small clusters on the baking sheet. These will form the base of each turtle candy.
Step 3: Make the Caramel
In a microwave-safe bowl, combine the unwrapped soft caramels and heavy cream. Microwave in 30-second intervals, stirring after each interval, until the caramel is smooth and melted (about 2 minutes total).
Let the caramel cool slightly to thicken, but not too much that it hardens.
Spoon about 1 tablespoon of melted caramel over each pecan cluster, making sure the pecans are covered but still visible around the edges.
