👨🍳 Step-by-Step Instructions
Step 1: Prepare the Beef
Start by dividing your ground beef into small portions (about 70–80 grams each). Do not overwork or tightly pack the meat—just loosely form it into balls. Keeping the meat loose ensures tenderness and better browning.
Place the meat balls on a tray and keep them chilled until ready to cook. Cold beef helps create a better crust when smashed.
Step 2: Make the Sauce
In a small bowl, mix mayonnaise, ketchup, mustard, vinegar (or pickle juice), garlic powder, and paprika. Stir until smooth and well combined. Taste and adjust seasoning if needed. Set aside in the fridge.
Step 3: Preheat the Cooking Surface
Heat your skillet or griddle over high heat. This is crucial—the surface must be very hot to achieve the signature crust. You should see light smoke before adding the meat.
Do not add oil if your pan is well-seasoned; the fat in the beef will be enough.
Step 4: Smash the Burgers
Place one or two beef balls onto the hot surface, leaving space between them.
Immediately place a piece of parchment paper over each ball and press down firmly with a spatula. Smash the beef until it is very thin (about 1 cm thick or less).
Important: Press only once. Do not press again later, or you will lose juices.
Season the top side with salt and pepper right after smashing.
Step 5: Cook the First Side
Let the patties cook undisturbed for about 2–3 minutes. You will notice the edges becoming dark and crispy—this is the Maillard reaction, which creates deep flavor.
Step 6: Flip and Add Cheese
Using a sharp spatula, scrape under the burger and flip it. Immediately place a slice of cheddar cheese on top.
Cook for another 1–2 minutes until the cheese melts and the burger is fully cooked.
Step 7: Toast the Buns
While the burgers cook, lightly toast the inside of the buns on the same pan until golden brown. This adds flavor and prevents sogginess.
Step 8: Assemble the Burger
Spread a generous amount of sauce on the bottom bun. Add:
- The smash burger patty with melted cheese
- Sliced onions
- Pickles
- Lettuce and tomato (optional)
Top with the upper bun.
For a classic double smash burger, stack two patties together.
💡 Tips for the Perfect Smash Burger
- Use high-fat beef (80/20): Lean meat will dry out and won’t form a good crust.
- High heat is essential: Without it, you won’t get the crispy edges.
- Don’t over-handle the meat: Keep it loose for tenderness.
- Smash once only: Pressing multiple times removes juices.
- Use a sturdy spatula: Thin spatulas may bend under pressure.
🔥 Why Smash Burgers Are So Popular
Smash burgers have gained massive popularity because they are quick, flavorful, and deliver restaurant-quality results at home. The crispy edges provide intense flavor, while the thin patties allow you to stack multiple layers for a rich, satisfying bite.
Unlike thick burgers, smash burgers cook faster and more evenly, making them ideal for home cooks and professionals alike.
