Ingredients:
* 4 boneless, skinless chicken breasts
* 1/2 cup ricotta cheese
* 1/2 cup fresh strawberries (chopped)
* 1 tbsp honey (plus extra for glaze)
* 1 tsp fresh thyme (or 1/2 tsp dried)
* Salt and pepper to taste
* 2 tbsp olive oil
* 2 tbsp butter
* 1 tbsp balsamic vinegar (optional, for depth)
Instructions:
1. Preheat oven to 375°F (190°C).
2. Slice a pocket into each chicken breast.
3. In a bowl, mix ricotta, chopped strawberries, honey, and thyme.
4. Stuff the mixture into each chicken breast and secure with toothpicks if needed.
5. Season the outside with salt and pepper.
6. Heat olive oil in a skillet over medium heat and sear chicken for 3–4 minutes per side until golden.
7. Transfer to oven and bake for 20–25 minutes until fully cooked.
8. In the same pan, melt butter with a drizzle of honey (and balsamic if using) to create a glaze.
9. Spoon the warm glaze over the chicken before serving.
